Afritadais a Philippine dish consisting ofchicken,beef,orporkbraisedintomato saucewithcarrots,potatoes,and red and greenbell peppers.It is served onwhite riceand is a common Filipino meal.[2]It can also be cooked withseafood.[3][4]

Etymology

The nameafritadais derived fromSpanishfritada( "fried"), referring to the first step of the preparation in which the meat is pan-fried before simmering in the tomato sauce.[5]

Description

Afritadais abraiseddish. It is first made bysautéinggarlicandonionand then adding the diced meat to fry until tender. After the meat is sufficiently browned, water andtomato pasteare poured into the pan, along with dicedcarrots,potatoesand sliced red and greenbell peppers.Slicedtomatoes,peas,chickpeas,orbeanscan also be added. It can be spiced to taste with salt,black pepper,bay leaves,andfish sauce.The mixture is simmered until the vegetables are cooked. It is served onwhite rice.[6][3][7]

Variants

Afritadahas different names based on the main ingredients of the dish. The most common ones areafritadang manok(chickenafritada),[8]afritadang baka(beefafritada), andafritadang baboy(porkafritada).[4]Afritadacan also be used to cookseafood,likefish(afritadang isda) ormussels(afritadang tahong), utilizing the same basic process as meatafritadas.[9][10]

Afritadais also commonly cookedhamonado-style (withpineapplechunks). This sweet variant is usually known as "pineappleafritada".[11]It is commonly confused withpininyahang manok,braisedchickenalso made withpineapples.However, the latter does not use tomato sauce.[12][13]

Similar dishes

Similarly, Filipinomenudoandkalderetaboth also use tomato sauce orbanana ketchup.However,menudoincludes sliced liver, whilekalderetaexclusively usesgoat meatorbeefoccasionally.Igadocontains liver but no tomato sauce.[14]
