Bebincaorbebinka,(Konkani;bibik) is alayer cakeofIndo-Portuguesecuisine in formerEstado da Índia Portuguesa,Goa.In traditionalbaking,a bebinca has between 7 and 16 layers, butbakeriescan modify thecake recipeas per convenience and taste.[1][2]It is especially popular during theChristmas season,but is available all year round due totourism in Goa.[3][4]It is also easily available to carry and preserve for a long time or eaten fresh.

Bebincawas also adopted as atyphoonname in the northwesternPacific OceanbyMacao.[5]

Preparation

Preparing bebinca is a slow process.[4]The batter is made with flour, sugar,ghee,egg yolk, andcoconut milk.[6][7]The batter is spread thinly onto a grill and the layers are stacked atop one another. Bebinca may be garnished with nutmeg or slivered almonds.[2]
