Chiftele,plural form ofchiftea,are flat and roundmeatballsfromRomanian traditional cuisine.Chiftele are usually made from mincedpork,mixed with mashed potatoes and spices, then deep-fried. Chiftele is served withpilaformashed potatoes.A variant mixing rice inside the meatball is calledperişoarefor sour soup, makingciorbă de perişoare.

There is a recipe calledchiftele de peşte(fish chiftele) consisting offishcakemade fromcarp.

Etymology

The wordchifteacomes fromköfte,which is theTurkishword forkofta.[1]

History

Centuries of Ottoman presence inRomaniahas left some variations from theTurkish culinary arts.Chiftele is the Romanian version of Turkishköfte.[citation needed]
