Iga penyet(English:squeezed ribs) isIndonesianEasternJavanese cuisine— friedbeefspare ribsserved with spicysambal terasi.The fried beef ribs is squeezed against a mortar filled with sambal, and usually served withlalabvegetables andsteamed rice.It was first popular in East JavaneseSurabayacity, and now has spread across Indonesia.[1]

Etymology

InIndonesianigameansribs,while the termpenyetinJavanesemeans "to squeeze", which refer to the serving method of squeezing the meat againstmortarfilled with spicysambalusingpestle.Thispenyetmethod of serving dishes is also applied to numbers of other dishes, such asempalpenyet,ayam penyet(ayam gorengpenyet) andayam bakarpenyet.
