Lagana(Greek:λαγάνα,fromλάγανον[1]) is aGreekflatbreadtraditionally baked forClean Monday,the first day of theGreat Lent.Traditionally, it was preparedunleavened(without the yeast), but leavened lagana is nowadays more common.[2]It is typically flat, oval-shaped, with surface decorated by impressing fingertips.[3][4]
Sesameseeds are a common topping, and it may also be topped with other herbs, and seasoned witholive oil.[5] The name comes from a Greco-Roman pastry doughlagana,which is also the origin of the wordlasagna,[6]also known astracta,fromAncient Greek:τρακτὸς.
