Beguni(Bengali:বেগুনী) is a commonBengalisnack. It is made ofeggplant(also known asaubergineorbrinjal) which is sliced and dipped in gram flour batter before being either fried or deep fried in oil. This dish is anIftarstaple amongBengalis.This dish is also popular in eastern Indian states of Assam and Tripura.[1]A similar European dish is known asaubergine fritters.[2]

The dish may be prepared by coating eggplant withbesanpaste and then frying the pieces in oil.[3]The eggplant is usually cut longitudinally (Bengali:বেগুনbegun) and dipped in a batter ofBengal gram flourwith salt andturmeric,anddeep-friedinmustardoil.
