Flemish stew,[1]known inDutchasstoofvleesorstoverijand is also known as "Grandma's stew", and inFrenchascarbon(n)ade[2]flamande[3]is aFlemishbeef(orpork) andonionstewpopular inBelgium,the Netherlands,Aosta Valley(Italy) andFrench Flanders.It is made withbeerandmustardspread on bread, seasoning can includebay leaf,thyme,clove,andjuniper berries.In the East and West Flanders provinces, often driedpruneswill be added while stewing.

In French, acarbon(n)ademay also be a dish of grilled horseloinand certain beefstewscooked with red wine, such asbeef bourguignonin the east of France.[4]but in English,carbonnadeis generally the Belgian dish. The term Flemish stew, being a generic term, is sometimes used to refer to other Flemish dishes such aswaterzooiorhochepot,in Dutch, the latter is calledhutsepot.[5][6]

Hutsepot'refers to mi xing (husselen) ingredients instead of mashing the ingredients into a 'stamppot' (in Flemishstoemp).

As a staple of Belgian cuisine, recipes vary between regions and households. Variations include swapping bread forgingerbreadorspeculaas,[7]using extra condiments likeSirop de Liège,[8]and using different kinds of beer. Common beers for this dish includeOud Bruin(Old Brown Beer), BruneAbbey BeerandFlanders Red.[9]Just before serving, a small amount of cider or winevinegarand eitherbrown sugarorred currantjelly are sometimes added.[9][10]

Carbonade is often accompanied byFrench fries,boiled potatoes, orstoemp.[9][11]It is widely available inrestaurantsandfriteriesin Belgium and the Netherlands.
