Fregula(often incorrectly writtenfregola[1]) is a type ofpastafrom theSardiniaregion ofItaly.It is similar to other Mediterranean starchy ingredients likeIsraeli couscous,and LevantineMaftoul.Fregulacomes in varying sizes, but typically consists ofsemolinadough that has been rolled into balls 2–3 mm in diameter and toasted in an oven.[2]

A typical preparation offregulais to simmer it in atomato-basedsaucewithclams.[3]
