Kitfo

Kitfo(Amharic:ክትፎ,IPA:[kɨtfo]) is anEthiopiantraditional dish that originated among theGurage people.It consists of mincedrawbeef,marinated inmitmita(a chili powder-based spice blend) andniter kibbeh(aclarified butterinfused with herbs and spices). The word comes from theEthio-Semiticroot k-t-f, meaning "to chop finely; mince."

Kitfocooked lightly rare is known askitfo leb leb.[1]Kitfois often served alongside—sometimes mixed with—a mild cheese calledayibeor cookedgreensknown asgomen.In many parts of Ethiopia,kitfois served withinjera,a spongy, absorbent sourdough crepe-style bread made from fermentedteffflour, although in traditionalGuragecuisine, one would usekocho,a thick flatbread made from theenseteplant. Anenseteleaf may be used as a garnish. Though not considered a delicacy,kitfois generally held in high regard.[citation needed]

Kitfois served on special occasions such as holidays; it is commonly used on the "Finding of the True Cross" or "Meskel"holiday celebrated annually on September 27 in Ethiopia.[citation needed]
