ZU Bakery was founded by Barak Olins in aFreeport,Maine barn owned by his brother and sister-in-law in 2000.[2]It moved to Clark Street in Portland'sWest Endin 2022. The bakery uses wood-fired ovens to bake French-style pastries.[4]It won theJames Beard Foundation Awardfor Outstanding Bakery in 2024.[5]
