As close to a vacuum as possible is the most fresh, period.Any cheap bag will likely either leak or be too difficult to get a reliable seam. The bags themselves are fine, they work as they should, except I don't always get the total seal on the bag, especially when I'm sealing in something to put in the fridge, like thawed ground beef, or cheese, or opened thin crackers, and then find out it wasn't totally sealed up, allowing air, and bacteria in.
With the zipper type, I know the seal is total and I don't have to try to press down hard again on the seal to insure it's really sealed; that gets old, fast.
